Du cépage (nom que l'on donne à une variété de vigne) dépend pour beaucoup la personnalité d'un vin et l'originalité d'une Appellation d'Origine Controlée.
Car si le travail du vigneron et l'influence du terroir sont bien sûr déterminants, c'est bien le cépage ou, c'est le cas ici, les cépages qui donneront vraiment son goût et sa typicité au vin.
On distingue trois grands types de cépages : Rouges, Gris, et Blancs.
